2007 Bohemian Vineyard Pinot Noir
In 2007, warm autumn weather accelerated the harvest to the first week in October. As with the previous three vintages, the whole berries were de-stemmed, cold-soaked for five days, and then fermented in one-ton bins with twice daily punch-downs. Upon completion of fermentation, the pressed juice was transferred to five new and five used French oak barrels for ten months of aging. The 2007 Bohemian Vineyard Pinot Noir was bottled on August 19th.
The 2007 Bohemian Vineyard Pinot Noir shows beautiful purity, with multiple layers of red and black fruits followed by a hint of dried herbs and earth. The wine enters gently onto the palate but then explodes with fruit. Its oak, fruit, and alcohol components are well-balanced, giving it a lingering mouth-feel, and its solid acid backbone carries the wine to a delightful finish. Imagine the possibilities once this wine has a year of bottle age!
